Update package versions in poetry.lock

The package versions of babel, black, certifi and coverage have been updated. Additionally, the Poetry version has been updated. These changes ensure the project is using the latest, more secure and more efficient versions of these packages. Documentation is also updated so double ´--´ is not shown as a long single dash.
